Chocolate Cheesecake


4 oz Cortés Ground Chocolate

1 pound cream cheese

1/2 tsp vanilla extract

2 eggs

48 María cookies

1 stick butter


In a blender, mix the eggs, sugar, and cream cheese; then, add the rest of the ingredients. Crumble the cookies and mix them with the butter. Then, press the mixture at the bottom of the wells of a mini-cupcake pan and bake for 10 minutes. Remove from the oven and let cool. Pour the mixture into the wells and bake at 365 °F for 40 minutes. Then, remove from the oven and take the cupcakes out of the pan. Decorate with your preferred fruit or chocolate frosting.

Note: This recipe can also be made with Cortés Lite Ground Chocolate.
