Our tradicional coquito recipe with a very Dev Amadeo-Twist

Ingredients

 1 Chocolate Cortés Barchopped into small pieces
 ¼ cup Water
 13.50 oz Pure Coconut Milk
 12 oz Evaporated Milk
 13.40 oz Condensed Milk
 1 ½ cups Coconut Rum
 ½ tsp Coconut Extract
 Semi-sweet chocolate chips, grated coconut and cinnamon to serveTo Serve

Place the chopped chocolate in a bowl. Boil the water at medium-high heat for 3 minutes. Pour it over the chocolate. Wait a minute and then stir for 2 to 3 minutes until the chocolate is completely melted. You can heat for 20 seconds in the microwave if necessary. Let it cool.

In a blender combine the rest of the ingredients. Add the melted chocolate and mix for 30 seconds. Pour into bottles and chill for several hours, preferably a overnight.

To serve, melt a handful of chocolate chips in the microwave in a small bowl. Cover the edge of a glass with the chocolate and cover with finely grated coconut. Serve the coquito very cold and sprinkle a little cinnamon on top.

Note: The “coquito” traditional recipe uses coconut cream but this is a clean version that uses coconut rum and coconut extract to enhance the coconut flavor.
