Chocolate Mini Cheesecakes
INGREDIENTS
2 cream cheese bars (16 oz)
½ cup sugar
½ cup Cortés Ground Chocolate
1 cup heavy cream, cold
3 tbsp powdered sugar
4 tbsp butter, melted
10 chocolate chip cookies
PROCEDURE
- In a bowl, beat the cream cheese, sugar, and Cortés Ground Chocolate using a hand mixer. Set it aside.
- In another bowl, mix the heavy cream with the powdered sugar. Set it aside.
- In a food processor (alternatively, you may use a masher and a food storage plastic bag), grind the cookies along with the butter, until the mixture gets a wet sand texture.
- Use small mugs or bowls to start assembling your mini cheesecakes. Spread a layer of the cookie “flour”, followed by a layer of the cream cheese and chocolate mixture, and top it all off with the whipped cream mixture. Garnish each one with chocolate pieces.
